Enchiladas Verdes (Enchiladas in Green Sauce)
Ingredients 2 cups cooked shredded chicken

12 oz. La VacaRica brand Queso Quesadilla, shredded

1/4 cup oil

1/2 cup chopped onion

12 corn tortillas

1-1/2 cups green sauce cilantro




Instructions 1. Heat oven to 350 degrees.

2.Combine chicken, half of the cheese and the onion; set aside.

3.Heat oil in small skillet.

4.Quickly dip each tortilla to thoroughly heat. Drain.

5.Dip in sauce and fill each tortilla with about 2 tablespoons chicken mixture; roll tightly.

6.Pour about 1/2 cup of the sauce in the bottom of a 13x9-inch pan. Arrange filled tortillas, seam side down, in a single layer.

7.Spoon remaining sauce over tortillas and sprinkle with remaining cheese.

8.Bake 10 to 15 minutes or until heated and cheese is melted. Garnish with chopped cilantro, if desired.
