Margarita Pork Kabobs
Ingredients 1 cup lime juice

1 tablespoon sugar

1/4 teaspoon salt

1 teaspoon ground coriander

1 clove garlic, minced

1 pound pork tenderloin, cut into 1-inch cubes

2 tablespoons butter, softened

1 tablespoon minced parsley

1 large red or green pepper, cut into 1-inch cubes

2 scallions, cut into 1-inch pieces

12 oz La VacaRica brand Queso Blanco or La VacaRica brand Queso Blanco con Frutas, cut into 1-inch cubes




Instructions 1. In small bowl, combine lime juice, sugar, salt, coriander and garlic. Reserve 2 teaspoons marinade.

2. Place remaining marinade in heavy plastic bag; add pork and seal bag. Marinate in refrigerator for at least 30 minutes.

3. Meanwhile, in another small bowl, combine butter, reserved marinade and parsley; set aside.

4. On wooden skewers, thread pork cubes, pepper, cheese cubes, and scallions.

5. Grill or broil 4 inches from heat source for 15 to 20 minutes or until done, basting with butter mixture during the last 5 minutes. Serve immediately.
Makes 8 appetizers.
