| Ingredients | 1 cup lime juice |
| 1 tablespoon sugar |
| 1/4 teaspoon salt |
| 1 teaspoon ground coriander |
| 1 clove garlic, minced |
| 1 pound pork tenderloin, cut into 1-inch cubes |
| 2 tablespoons butter, softened |
| 1 tablespoon minced parsley |
| 1 large red or green pepper, cut into 1-inch cubes |
| 2 scallions, cut into 1-inch pieces |
| 12 oz La VacaRica brand Queso Blanco or La VacaRica brand Queso Blanco con Frutas, cut into 1-inch cubes |

| Instructions |
1. In small bowl, combine lime juice, sugar, salt, coriander and garlic. Reserve 2 teaspoons marinade. |
| 2. Place remaining marinade in heavy plastic bag; add pork and seal bag. Marinate in refrigerator for at least 30 minutes. |
| 3. Meanwhile, in another small bowl, combine butter, reserved marinade and parsley; set aside. |
| 4. On wooden skewers, thread pork cubes, pepper, cheese cubes, and scallions. |
| 5. Grill or broil 4 inches from heat source for 15 to 20 minutes or until done, basting with butter mixture during the last 5 minutes. Serve immediately. |
