| Ingredients | 4 tablespoons ghee (clarified butter) |
| 1 teaspoon salt |
| 1 teaspoon coriander |
| 1 teaspoon cumin seed |
| 1/2 teaspoon cayenne |
| 2 cups fresh green peas, hulled |
| oil for deep frying |
| 8 oz. The Rich Cow brand Paneer cheese, cut in 3/4 inch cubes |

| Instructions |
1. Heat the ghee and add salt, cumin seed and cayenne. Stir well, add peas. Continue to stir until the peas are well coated with the ghee. |
| 2. Lower the heat and cook very gently, about 15 minutes. Stir gently from time to time. No water is needed. |
| 3. When peas are tender, add the coriander. Mix well. Turn off the heat. Set aside. |
| 4. Heat oil to 375 degrees in a deep fryer. |
| 5. Drop the cheese cubes one at a time into oil. In about 1 minute or when golden, remove gently with a slotted spoon and drain on absorbent paper. |
| 6. Add the browned paneer to the peas and heat gently together for 5 to 10 minutes and serve. |
