| Instructions |
1. Heat the ghee and add salt, cumin seed and cayenne. Stir
well, add peas. Continue to stir until the peas are well coated with
ghee. Lower the heat and cook very gently, about 15 minutes. Stir
gently from time to time. No water is needed. |
| 2. When peas are tender, add coriander. Mix well. |
| 3. If you have purchased Bharatma
brand Fried, Cubed Paneer, then simply add the cold cubes to the peas
and heat gently together for 10 minutes, then serve. |
| 4. If you have purchased Bharatma
brand Paneer which has not been pre-cubed and fried, then turn off the
heat on the peas. Set aside. Heat oil to 375 degrees in a deep fryer. Cut
Paneer into ¾" cubes and drop the cheese cubes one at a time into the
oil. In about one minute, or when golden brown, remove the cubes with a
slotted spoon and drain on absorbent paper. Add the browned Paneer cheese to
the peas and heat gently together for 5 to 10 minutes, then serve. |
